1 yellow onion, chopped
4 garlic cloves, minced
4 green onions, chopped
3 dried tomatoes, chopped

Shredded cabbage (amount to preference)
3 tomatoes, chopped
2-3 carrots, sliced

Broth
4 cups vegetable stock
1 vegetable bouillon cube

1 tbsp tomato paste
1 tsp turmeric
1 tsp paprika
1 tsp Vegeta seasoning

A pinch of cloves
2 bay leaves
Fresh parsley, chopped (for garnish)
1 inch ginger, minced
Instructions
Prepare the Vegetables:
Chop the yellow onion, green onions, dried tomatoes, carrots, peppers, celery, and tomatoes.
Mince the garlic cloves, roasted garlic, and ginger.
Shred the cabbage.
Sauté Aromatics:
In a large pot, heat a bit of oil over medium heat.
Add the chopped yellow onion and sauté until translucent.
Add the minced garlic and roasted garlic, and sauté for another 1-2 minutes until fragrant.
Add Vegetables:
Stir in the green onions, dried tomatoes, carrots, peppers, celery, tomatoes, and shredded cabbage.
Cook for about 5 minutes, stirring occasionally.
Incorporate Spices:
Add the tomato paste, turmeric, paprika, Vegeta seasoning, black pepper, and a pinch of cloves.
Mix well to coat the vegetables with the spices.
Add Broth and Simmer:
Pour in the vegetable stock and add the vegetable bouillon cube.
Drop in the bay leaves.
Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes, or until the vegetables are tender.
Final Touches:
Stir in the minced ginger and adjust the seasoning with more salt and pepper if needed.
Remove the bay leaves before serving.
Garnish and Serve:
Ladle the soup into bowls and garnish with freshly chopped parsley.
